Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

4 slice cinnamon-raisin bread
1/4 c. cream cheese
1 tbsp. maple syrup
1/4 tsp. ground cinnamon
1 pinch salt
1 small red Anjou pear
1/2 c. crunchy peanut butter

Instructions

Toast bread.
Meanwhile, in medium bowl, stir together cream cheese, syrup, cinnamon, and salt until well blended. Thinly slice pear.
On each slice of bread, spread 2 tablespoons peanut butter and 1 tablespoon cream cheese mixture. Arrange one-fourth of pear slices on top. Serve immediately.
