Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Ingredients
6 tbsps liquid egg whites
2 large eggs
2 1/2 cups flour
2 cups skim milk
2 tsps ground cinnamon
1 tsp ground ginger
1/2 tsp kosher salt
1 cup canned pumpkin
2 tsps baking powder
1 tsp baking soda
1/4 cup brown sugar
Instructions
1. Mix the dry ingredients with a whisk.
2. Add remaining ingredients and mix well.
3. Let batter sit for 15 minutes. Heat up waffle maker.
4. Using a 1/4 cup measure, pour batter into each mold - cook for 4-6 minutes, or until desired consistency.
5. Serve with fresh fruit and pancake syrup.
