Health and fertility benefits of Pork with Sweet Potatoes and Broccoli

Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. (Reference: http://www.ncbi.nlm.nih.gov/pubmed/11506060). Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Apples will improve your body's sensitivity to insulin (Reference: http://care.diabetesjournals.org/content/27/1/281.full)

Ingredients

4 sweet potatoes (about 1 3/4 lb total)
1 bunch broccoli (about 1 lb)
2 1/2 tbsp. olive oil
4 boneless pork chops
1/2 tsp. ground ginger
1/4 tsp. ground cinnamon
Kosher salt and pepper
Sliced apples, for serving

Instructions

Heat oven to 450 °F. Prick the sweet potatoes with a fork and microwave on high for 5 minutes. On a rimmed baking sheet, toss the broccoli with 2 Tbsp oil and 1/4 tsp each salt and pepper. Roast for 7 minutes. Toss the broccoli, add the sweet potatoes to the baking sheet and roast until the vegetables are tender, 8 to 10 minutes more.
Meanwhile, heat a grill pan over medium-high heat. Season the chops with the ginger, cinnamon, 1/2 tsp salt and 1/4 tsp pepper. Brush with remaining 1/2 Tbsp oil and grill until cooked through, 4 to 6 minutes per side. Serve the chops with the broccoli, sweet potatoes and fresh apple slices, if desired.
