Lunch: Giant Watermell-O Shot

Ingredients
1 Large watermelon
4 3-ounce boxes watermelon Jell-O
2 1-ounce boxes unflavored gelatin
4 c. boiling water
4 c. vodka
Instructions
Halve watermelon and scoop out flesh. (Save for another use!)
In a large mixing bowl, combine jell-O mix and unflavored gelatin. Pour in boiling water and whisk until dissolved, 3 minutes. Add vodka and whisk until combined.
Transfer mixture to a pourable container (such as a glass measuring cup) and pour into halved watermelons.
Carefully transfer to a baking dish or baking sheet (lay on paper towels if the watermelons seem wobbly).
Refrigerate until firm, 4 to 5 hours.
Using a sharp knife, slice and serve immediately.
