Dinner: Sweet Potato Casserole
Recipe by Vera Kaltinick Make yourself comfortable: This incredible sweet potato casserole will surely warm you up on a cold fall evening.
Ingredients
1 organic chipotle pepper
1 1/4 c. organic light cream
3 medium organic sweet potatoes
kosher salt
Instructions
Preheat oven to 350 degrees F.
Puree together the chipotle pepper and the cream until smooth.
Place a small amount of the cream mixture in the bottom of a 1 1/2-quart baking dish. Place a thin layer of overlapping potato slices over that. Drizzle the potatoes with a tablespoon of the chipotle cream and a sprinkle of salt. Repeat using all the potatoes and cream, sprinkling each layer with a pinch of salt.
Bake for 1 hour, or until the potatoes feel tender when pierced with a sharp knife.
