Lunch: Three-Cheese Mashed Potatoes

Recipe by Joanna Saltz These are the creamy, cheesy way to do mashed potatoes.

Ingredients

5 lb. white potatoes, peeled and cut into 1-inch pieces
6 tbsp. unsalted butter
1 (8 oz.) package whipped cream cheese
2 c. white cheddar cheese, shredded
1 c. Parmesan cheese
8 oz. sour cream
1 tsp. garlic salt
Salt and pepper to taste
Milk (for consistency)

Instructions

In a saucepan, place potatoes and add enough water to cover. Heat to boiling. Cook uncovered 15 to 20 min or until tender; drain. Mash potatoes.
In a large bowl, beat cream cheese, cheddar cheese and Parmesan cheese by hand or with a hand mixer on low speed until smooth. Mix in sour cream garlic salt, salt and pepper.
Stir cheese mixture into mashed potatoes until well blended. If potatoes are too still, stir in milk, 1 tbsp. at a time until desired consistency.
