Snack: Strawberry Short-Cookies

Ingredients
1 box sugar cookie mix (plus any ingredients the mix requires)
Instructions
Make the cookies: Bake sugar cookies according to the package's instructions. Roll into 1 1/2" balls and place about an inch apart on a parchment-lined baking sheet. Do not flatten the dough balls; you want them to be light and fluffy, like shortcake.
Make the whipped cream: Combine sugar and whipping cream in a large mixing bowl. Use an electric mixer to whip to stiff peaks, about 2-3 minutes. You can make this up to 10 hours ahead of time.
Make the strawberries: Combine strawberries and sugar in a small bowl, stirring to coat. Let sit for 20 minutes, until juices form. Serve with whipped cream and fresh cookies, letting people assemble their own short-cookie treats.
