Lunch: Roast Chicken with Potatoes and Garlic

This variation on classic roast chicken includes peppers, potatoes and plenty of garlic, proving the delicious possibilities of poultry.

Ingredients

Roast Chicken Pieces
1 lb. red potatoes
1 small red pepper
1 small yellow pepper
1 whole head garlic
1 tbsp. dried rosemary

Instructions

Prepare Roast Chicken Pieces as in steps 1 through 3, but add potatoes, peppers, garlic cloves, and rosemary to pan with chicken before roasting. After roasting, squeeze garlic from peels, if you like.
