Dinner: Brined Pork Chops

Ingredients

2 qt water
1/4 cup kosher salt
1/4 cup mustard seeds
1/4 cup sugar
2 tablespoons pickling spices
6 garlic cloves, smashed with side of a large knife
6 (1 1/2-inch-thick) rib pork chops
4 to 6 tablespoons olive oil
1/2 cup dry Riesling
1/2 cup chicken broth

Instructions

Bring water to a boil with kosher salt, mustard seeds, sugar, pickling spices, and garlic and simmer 15 minutes. Cool brine completely, then add chops and chill, covered, 1 to 2 days.
