Lunch: Corn with Fresh Herbs

Spruce up frozen corn niblets with a buttery blend of fresh parsley, chives and thyme.

Ingredients

3 bags (12 oz each) frozen corn
3 tablespoons butter or margarine
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1 tablespoon chopped fresh thyme leaves
1/4 teaspoon salt

Instructions

Place corn in colander or strainer. Hold under cold running water in sink until thawed; drain well.
In 12-inch skillet, heat butter over medium-high heat until foamy. Add corn and remaining ingredients; cook 3 to 5 minutes, stirring frequently, until corn is thoroughly heated.
