Lunch: Family Hamburger Soup

For an alternative to patties on a chilly February night, try this quick-fix meat and vegetable soup.

Ingredients

1 lb lean (at least 80%) ground beef
1/4 cup chopped onion
2 cups diced peeled potatoes
1 cup sliced celery
1 bag (12 oz) frozen mixed vegetables
3 cups water
2 cans (10 1/2 oz) condensed beef broth
2 cups Muir Glen™ organic diced tomatoes, undrained (from 28-oz can)
1 tablespoon Worcestershire sauce

Instructions

In 3-quart saucepan or Dutch oven, cook beef and onion over medium-high heat, stirring frequently, until beef is thoroughly cooked; drain.
Add all remaining ingredients; mix well. Heat to boiling. Reduce heat to low; cover and simmer 18 to 20 minutes, stirring occasionally, until vegetables are tender.
