Lunch: Fruity Salad

Health and fertility benefits of Fruity Salad

Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.

Ingredients

1/2 Cara Cara or other orange
1/4 c. oil
1/2 of a shallot
1/2 tsp. Dijon mustard
.13 tsp. salt
1/4 c. raw shelled pumpkin seeds
2 oranges, peel and white pith removed
1 head red-leaf lettuce
3 c. mâche or baby spinach
1 ripe avocado
1/4 c. crumbled Cotija cheese

Instructions

Whisk ingredients in a large bowl until blended.
Toast pumpkin seeds in a small skillet over medium heat until they turn light golden (about 3 minutes).
Add oranges, lettuce, mâche and avocado to bowl with dressing, and toss to mix and coat. Sprinkle cheese and pumpkin seeds over top.
