Side Dish: German Potato Salad

A low fat version of an old fashioned favorite.

Ingredients

20 small new potatoes
1 tbsp dijon mustard
1 stalk medium celery
2 large red onions, chopped
2 tbsps low fat mayonnaise
1 dash fleur de sel
1 dash pepper

Instructions

1. Boil the halved new potatoes until tender.

2. In a large bowl, add chopped onion and celery to drained potatoes.

3. Mix tablespoon of Dijon mustard with low fat mayonnaise; mix into potatoes.

4. Add a pinch of fleur de sel or good salt and ground pepper and mix again.

5. Serve warm.
