Soup: Gazpacho Soup

An easy to make light soup served cold that's very refreshing and super yummy.

Ingredients

2 1/2 cups vegetable juice
1 cup chopped or sliced tomato
1/2 cup chopped celery
1/2 cup chopped bell pepper
1/2 cup chopped onion
3 tbsps white wine vinegar
2 tbsps extra virgin olive oil
1 clove garlic
1 tbsp parsley
1/2 tsp salt
1/3 tbsp worcestershire sauce
1/2 tsp black pepper

Instructions

1. Combine the juice, tomatoes, celery, cucumber, pepper, onions, vinegar, oil, garlic, parsley, salt, Worcestershire sauce and black pepper in a large glass or stainless-steel bowl.

2. Cover and refrigerate overnight.

3. Serve cold.
