Lunch: Creamy Turkey Primavera

For a taste of Italy in less than 15 minutes, try this combo of frozen veggies mixed into pasta and tossed with garlic-flavored spreadable cheese, grated Parmesan and cubed smoked turkey.

Ingredients

1 bag frozen mixed vegetables (cauliflower, carrots and asparagus)
8 oz. capellini (extra-thin spaghetti)
12 oz. smoked turkey
1 package light garlic-and-spice soft spreadable cheese
3/4 c. grated Parmesan cheese

Instructions

Bring 3 cups water to a boil in a large nonstick skillet. Add vegetables, cover and boil gently until thawed, about 4 minutes.
Stir in pasta. Return to a gentle boil and cook 3 to 4 minutes, stirring often, until pasta is firm-tender and almost all water is absorbed. Remove from heat.
Add turkey and cheeses and stir to mix and coat. Serve immediately.
