Soup: Tomato Soup

Fresh tomato soup with quality ingredients is the perfect low calorie comforter.

Ingredients

4 cups water
10 plum tomatoes
1 cube bouillon, low sodium
1 tsp black pepper
1 clove garlic
2 tbsps chopped shallots
1 tbsp tarragon leaves
1 tbsp olive oil

Instructions

1. In a non-stick saucepan heat oil over medium-high heat.

2. Add garlic, shallots, cook 5 minutes or until softened and starting to brown.

3. Cut tomatoes in large chunks and add to pan.

4. Sprinkle tarragon over tomatoes.

5. Sauté tomatoes for 5 minutes.

6. Add 4 cups of water and bouillon cube.

7. Simmer for 20 minutes.

8. Put through blender.
