Lunch: Boiled Parslied Potatoes
Ingredients
2 pounds medium waxy potatoes, whole and unpeeled
Kosher salt
3 tablespoons butter
Handful or 2 chopped fresh parsley sprigs
Instructions
Bring a large pot of water to the boil. Salt it and add the potatoes. Cook the potatoes until tender. Drain and peel. Toss with the butter and parsley to coat. Serve.
