Ingredients
1/4 cup crushed corn flakes cereal
1 1/2 tablespoons yellow cornmeal
2 1/2 teaspoons Creole seasoning
1 pound catfish fillets, cut crosswise into 12 strips
Cooking spray
Cucumber Coleslaw
Instructions
Combine first 3 ingredients in a shallow dish. Lightly coat catfish with cooking spray. Dredge catfish in cereal mixture. Place catfish in a jellyroll pan coated with cooking spray. Lightly coat catfish again with cooking spray.
Bake, uncovered, at 425 ° for 10 to 12 minutes or until fish flakes easily when tested with a fork. Serve with Cucumber Coleslaw.
