Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Ingredients

2 cups Progresso™ chicken broth (from 32-oz carton)
1/3 cup chopped onion
1 bag (12 oz) frozen chopped broccoli
1 1/3 cups plain mashed potato mix (dry)
2 cups cut-up cooked chicken
2 cups shredded Swiss cheese (8 oz)
2 cups milk
1/2 teaspoon salt

Instructions

In 3-quart saucepan, heat broth, onion and frozen broccoli to boiling. Reduce heat; cover and simmer 5 minutes, stirring occasionally.
Stir in potatoes until well blended. Stir in remaining ingredients.
Heat over low heat about 5 minutes, stirring occasionally, until soup is hot and cheese is melted.
