Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

1/4 cup salted butter
2/3 cup sugar
1/2 tbsp molasses
1 large egg
1/2 tsp vanilla extract
3/4 cup all-purpose flour
1/2 tsp baking soda
1/2 tsp cinnamon
1 1/2 cups oats

Instructions

1. Preheat oven to 350 °F (175 °C).

2. Mix butter, sugar and molasses until creamy.

3. Add the egg and vanilla and mix until creamy.

4. Add combined flour, baking soda, cinnamon and salt.

5. Add oats.

6. Drop small balls of dough onto ungreased cookie sheet.

7. Bake for 12 minutes or until light golden brown.
