Lunch: Ham and Spinach Focaccia Sandwiches

Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility. Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.

Ingredients

3 tablespoons low-fat mayonnaise
2 tablespoons chopped fresh basil
2 teaspoons sun-dried tomato sprinkles
1/4 teaspoon crushed red pepper
1 (8-inch) round focaccia bread (about 8 ounces)
8 ounces smoked deli ham, thinly sliced
1 (7-ounce) bottle roasted red bell peppers, drained and sliced
1 cup spinach leaves

Instructions

Combine the first 4 ingredients in a small bowl. Cut bread in half horizontally. Spread the mayonnaise mixture over the cut sides of bread. Place ham over bottom half of bread. Top with peppers and spinach, and cover with top half of bread. Cut the sandwich crosswise into 4 wedges.
