Soup: Winter Squash Soup

Extremely low calorie, nonfat healthy veggie soup.

Ingredients

16 oz butternut squash
1/2 cup chopped onion
2 cubes chicken bouillon
1 tsp nutmeg

Instructions

1. Sauté 1/2 onion in cooking spray, like Pam.

2. Peel and seed butternut squash, cut into 1" cubes.

3. Add 6 cups chicken stock, boil until squash is soft.

4. Blend with a blender until smooth.

5. Add salt, pepper and nutmeg to taste.
