Dinner: Cilantro Lime Shrimp

Recipe by Judy Kim Shrimp tossed with fresh herbs and lime will wake up your taste buds.

Ingredients

2 tbsp. extra-virgin olive oil
4 garlic cloves, grated
2 limes, zested and juiced
kosher salt
Freshly ground black pepper
1 lb. tail-on shrimp, peeled and deveined
3 tbsp. unsalted butter
1/2 c. chopped cilantro (leaves and stems)

Instructions

In a large skillet over medium heat add olive oil and garlic; sauté for 1 minute. Add lime zest and juice, 1 teaspoon salt, 1/2 teaspoon black pepper, and shrimp. Cook until pink, about 2 minutes.
Turn off heat and add butter and cilantro. Stir until butter is melted and creates a silky sauce. Serve immediately.
