Lunch: Frozen Cucumber Margarita

Ingredients

2 cups ice
5 ounces tequila
1 ounce triple sec
1/2 ounce simple syrup, optional
Juice of 1 lime
1 small bunch fresh mint, leaves and tender stems only
1/2 hothouse cucumber

Instructions

Combine the ice, tequila, triple sec, simple syrup if using, lime jice, mint and cucumber in a blender. Blend on medium speed until lightly frothy. Serve.
