Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS. Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.

Ingredients

1/4 cup crumbled feta
6 large egg
1/2 tsp garlic
1/2 cup chopped onion
4 cups spinach
1/2 cup chopped or sliced tomato
3 oz boneless salmon

Instructions

1. Beat eggs and add all ingredients.

2. Pour into a pie dish that has been lightly sprayed with olive oil.

3. Bake at 325 °F (160 °C) for about 20 minutes or till egg mix is set.

4. Yummy for breakfast, lunch or dinner!
