Salmon is rich in omega-3 fatty acids and also one of the best sources of vitamin D. Keeping vitamin D levels up is important to women with PCOS. Ingredients
1/4 cup crumbled feta
6 large egg
1/2 tsp garlic
1/2 cup chopped onion
4 cups spinach
1/2 cup chopped or sliced tomato
3 oz boneless salmon
Instructions
1. Beat eggs and add all ingredients.
2. Pour into a pie dish that has been lightly sprayed with olive oil.
3. Bake at 325 °F (160 °C) for about 20 minutes or till egg mix is set.
4. Yummy for breakfast, lunch or dinner!
