Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

4-1/2 cups all-purpose flour
3 cups whole wheat flour
2/3 cup sugar
1/4 cup baking powder
1 tablespoon apple pie spice
1 teaspoon salt
1 teaspoon ground cinnamon

Instructions

In a large bowl, combine the first seven ingredients. Store in an airtight container for up to 2 months. Yield: 6 batches (1-1/3 cups each).
To prepare waffles: Place 1-1/3 cups waffle mix in a large bowl. In another bowl, whisk the milk, egg and oil. Stir into dry ingredients just until moistened.
Bake in a preheated waffle iron according to manufacturer’s directions until golden brown.
