Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to.

Ingredients

2 cups of Brussels sprout leaves (outer leaves from 2 pounds of sprouts)
2 tablespoons of melted ghee (or dairy free alternative to make this vegan)
Kosher salt to taste
Lemon zest

Instructions

Preheat oven to 350 degrees.
In a large bowl, mix together the leaves, ghee, and salt.
Line two baking sheets with parchment paper. Divide the leaves into a single, even layer on each baking sheet.
Bake for 8-10 minutes until leaves are crispy and browned around edges.
If desired, grate lemon zest on top of chips before serving.
