Side Dish: Green and Pink Salad
A very fresh and spicy salad with red onion, cucumber, avocado and pecans.

Ingredients
1 sweet Italian red onion
1/2 cup Valdosta pecans
1/2 cup lime juice
1 medium head lettuce
10 tbsps parmesan cheese
1 dash black pepper
1 tbsp salt
5 tsps vinegar
5 tbsps olive oil
1 1/2 cups cubed avocado
1 1/2 cups pared, chopped cucumber
1 clove garlic
Instructions
1. Wash and dry the lettuce.
2. Cut the red onion in fine slices put them in a bowl with the lime juice, salt it, reserve covered in the fridge for one hour or when you see the lime juice turn pink.
3. In a bowl combine the lettuce, avocado, cucumber (cut in half moons retiring the seeds part), salt and pepper it.
4. Before serving add the olive oil, parmesan. Make a puree with the garlic and add it in, the vinegar, the red onions (without the lime juice), mix it all well an finally cover it up with the Valdosta pecans.
