Lunch: Blue Cheese Tossed Salad Recipe

Ingredients

1/2 cup sliced almonds
1/4 teaspoon salt
1/4 teaspoon pepper
1 tablespoon butter
1 package (10 ounces) hearts of romaine salad mix
1 cup (4 ounces) crumbled blue cheese
1 medium red apple, chopped
1 teaspoon grated lime peel

Instructions

In a small skillet over medium heat, cook the almonds, salt and pepper in butter for 5-6 minutes or until toasted, stirring occasionally. Drain on paper towels.
In a large bowl, combine the romaine, blue cheese, apple, lime peel and almonds. In a jar with a tight-fitting lid, combine the dressing ingredients; shake well. Drizzle over salad and toss to coat.
