Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 lb. pasta
1 c. walnuts
2 c. packed parsley leaves
6 small sage leaves
1 clove garlic
3/4 tsp. salt
1/2 tsp. Pepper
3/4 c. olive oil
1/2 c. Parmesan cheese
1/2 c. reserved cooking liquid
Freshly grated Parmesean
chopped parsley

Instructions

In a large pot of boiling, salted water, cook pasta. Drain; reserve some of the cooking liquid.
Meanwhile, purée walnuts, packed parsley leaves, sage leaves, garlic, salt, pepper, and olive oil in a food processor until smooth. Toss with pasta, 1/2 cup Parmesan cheese, and about 1/2 cup of the cooking liquid to moisten. Serve, topped with more freshly grated Parmesan cheese and some chopped parsley.
