Breakfast: Potato Breakfast Casserole

Recipe by harpwatts Yummy potato, bacon, and egg casserole. The flavors meld together into a cohesive taste explosion. I actually came up with this for a friend's birthday party weekend I was catering. Totally off the wall and it was so good. Enjoy!

Ingredients

4 russet potatoes, cut into small chunks
5 slices bacon, cut into 1/2-inch pieces
1 tablespoon butter
2 cloves garlic, pressed
1 teaspoon salt
1 teaspoon ground black pepper
6 eggs, beaten
1 tablespoon dried oregano
1 cup shredded Cheddar cheese

Instructions

Preheat oven to 400 degrees F (200 degrees C).
Mix potatoes, bacon, butter, garlic, salt, and black pepper together in a 8x8-inch pan.
Bake in the preheated oven until potatoes are tender, 30 minutes. Reduce heat to 350 degrees F (175 degrees C).
Pour eggs over potato mixture; season with oregano. Stir gently to incorporate.
Bake in the preheated oven until eggs are set and cooked through, about 10 minutes. Sprinkle with Cheddar cheese; bake until cheese is melted, about 2 more minutes.
