Lunch: Roasted Green Tomatoes with Garlicky Bread Crumbs

Recipe by Clinton Kelly Don't let unripened tomatoes go to waste. Roasting gives them a deeper flavor and the bread crumbs provide a contrasting crispiness.

Basil is an excellent stress reliever, and has antioxidant and anti-inflammatory benefits.

Ingredients

1/4 c. olive oil
4 medium green tomatoes
1 tbsp. balsamic vinegar
kosher salt
Pepper
1 c. fresh bread crumbs
1/4 c. grated Parmesan or Romano cheese
2 clove garlic
1/3 c. chopped fresh basil leaves
2 tbsp. fresh thyme leaves

Instructions

Heat oven to 400 degrees F. Oil a shallow 3 quart baking dish.
Cut the tomatoes in half through the equator and arrange, cut-side up, in the prepared baking dish. Drizzle with the vinegar, then season with 1/2 teaspoon salt and 1/4 teaspoon pepper.
In a medium bowl, combine the bread crumbs and cheese, then the oil. Toss with the garlic, basil, and thyme. Sprinkle the crumb mixture over the tomatoes.
Bake, covered, for 25 minutes. Uncover and bake until the tomatoes are tender and the bread crumb mixture is golden brown, 10 to 12 minutes more. Sprinkle with additional basil, if desired.
