Lunch: Foil Pack Cheese Quesadilla with Fresh Salsa

Ingredients
1 tomato, diced
1/4 red onion, chopped
Small handful cilantro, chopped
1/2 lime
1 large tortilla
1/2 c. shredded Tex-Mex cheese
Instructions
To make salsa, combine tomato, onion, cilantro, and the juice of 1/2 lime in a bowl, set aside.
Tear 2 pieces of foil that are about 12-inch by 18-inch and stack them on top of each other.
Place tortilla on foil so it is slightly off center (so it will center once it’s folded) and cover half of it with cheese. Fold tortilla to create quesadilla. Fold up packet ensuring you have a tight seal.
When ready to cook, place sealed packet on hot grill or over fire for about 5 minutes, flipping once.
Remove packet from grill and allow to slightly cool. Unfold packet, top with salsa, and enjoy.
