Lunch: Grilled Zucchini with Goat Cheese and Mint
This simple side is perfect for a summertime barbecue.
Ingredients
4 medium zucchini
4 tbsp. soft goat cheese
2 tbsp. fresh mint
salt and pepper
Instructions
Brush zucchini halves with olive oil and grill the cut sides until golden, about 5 minutes. Turn and sprinkle each with 1 tablespoon goat cheese. Grill until the cheese is melted and zucchini are tender. Sprinkle with fresh mint and season to taste with salt and pepper.
