Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

Prepared waffle batter
Melted butter, for dunking
1/4 c. sugar
2 tbsp. ground cinnamon
Vanilla ice cream, for serving
Hot coffee, for serving

Instructions

Prepare waffle batter and cook in waffle maker. Transfer to a cooling rack while you prepare the sugar dredging station.
Add melted butter to shallow bowl, then dunk waffles in the butter until both sides are evenly coated. In a shallow dish, combine sugar and cinnamon. Dunk waffle in cinnamon sugar.
Top waffle with ice cream scoops, then pour hot coffee over the ice cream. Serve immediately.
