Skinless chicken breast is an excellent source of the protein, as its contains 21 grams of protein for every 100 grams of breast. Ingredients

2 tbsp. Extra virgin olive oil
1 c. onion, diced
1 c. red and green bell pepper, diced
kosher salt
Freshly ground black pepper
4 boneless, skinless chicken breasts
1 c. cheddar cheese, shredded
2 tbsp. Cajun seasoning

Instructions

Preheat oven to 350 degrees F.
In a skillet over medium heat, heat olive oil. Add onions and peppers and cook until tender, 5 to 7 minutes. Season with salt and pepper. Remove from heat and let cool slightly.
With a sharp paring knife, slice into the chicken breast to create a pocket. Repeat with all four breasts. Stuff each with 1/4 of vegetable mixture, then top with 1/4 cup cheddar cheese. Rub all sides of chicken breast with 1/2 tablespoon Cajun seasoning, then salt and pepper.
Place chicken breasts in a large baking dish and bake until cooked through, about 25 minutes. Serve while cheese is hot and bubbly!
