Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

2 large eggs, separated
1/4 cup milk, nonfat
1 tsp cinnamon
1/4 tsp nutmeg
1 dash salt, pinch
1 tbsp vegetable oil
1/2 cup mashed overripe banana
1 cup ground almonds
1/4 tsp baking powder

Instructions

1. Mix yolk, mashed banana, milk, honey and oil.

2. Sift in almond meal, baking powder and salt.

3. Stir in spices.

4. Beat whites until stiff, hard peaks form.

5. Carefully fold in egg whites, mix to fully combine.

6. Fold in sliced fruit if desired.

7. Bake in a waffle iron. These waffles tend to be wet so bake them at a lower temperature for a longer amount of time.

8. Note: while most grainless waffles are heavy this special technique makes these waffles light!
