Lunch: Chicken Gyros

Skinless chicken breast is an excellent source of the protein, as its contains 21 grams of protein for every 100 grams of breast. Ingredients

1/3 c. lemon juice
1/4 c. olive oil
2 tsp. minced garlic
1 tsp. dried oregano
1/4 tsp. Black pepper
1 lb. boneless chicken breasts, cut into strips

Instructions

Make the chicken: Combine lemon juice, olive oil, garlic, oregano and black pepper in a large resealable bag or mixing bowl. Add chicken and toss to coat. Marinate 30 minutes in the refrigerator.
Make the tzatziki: Mix the Greek yogurt, dill, lemon juice and garlic, whisking to combine. Fold in cucumbers. Set aside.
Pour a little olive oil onto a sauté pan over medium heat, giving it a minute or two to warm up. Add the chicken strips (you may have to work in two batches, to avoid overcrowding the pan) and sauté until the inside is completely white and no pink is visible if you cut a strip in half, about 4-5 minutes per side.
Make the wrap: Top each pita with a few chicken strips, red onion, cherry tomatoes and tzatziki sauce.
