Lunch: Southern Fried Pork Chops with Gravy

Recipe by Geoff Schwartz I like to add a vegetable with every meal—usually sautéed green beans or broccolini with this one.

Ingredients

1 c. vegetable oil
1 egg, beaten
1 c. italian breadcrumbs
1 14-oz. can cream of mushroom soup
4 bone-in pork chops
kosher salt
Black pepper
1/2 c. Parmesan cheese

Instructions

In medium saucepan, heat vegetable oil until warm.
In three separate bowls set out egg, breadcrumbs, and cream of mushroom soup combined with 1/2 cup water.
Preheat oven to 350 degrees F. Lightly season pork chops with salt and pepper, then dip in egg bath and then breadcrumbs. Make sure chop is covered completely in breadcrumbs.
When oil is hot, add pork chop. Brown both sides. Remove from pan and lay flat in large baking dish. Cover with cream of mushroom soup. and place dish in oven for 20 minutes uncovered. Sprinkle with Parmesan cheese and cook for 5 to 10 more minutes, or until cheese is melted. Serve and enjoy!
