Dinner: Cajun Shrimp with Creamy Grits and Greens

Ingredients

Creamy Grits
3/4 c. quick-cooking grits
1/4 tsp. salt
3 c. water
1 tub spreadable light garlic and fine herbs cheese (such as Boursin light)
Greens
1 bag leafy greens blend (in microwave bag)
1 tsp. olive oil
.13 tsp. each salt and crushed red pepper
Cajun Shrimp
2 tsp. olive oil
1 lb. large (21 to 30) thawed, frozen
1 tsp. Cajun seasoning

Instructions

Cook grits and salt in water as package directs. Remove from heat, stir in cheese, cover and set aside.
Place ingredients in a large microwave-safe bowl. Cover with vented plastic wrap and microwave on high 3 minutes or until greens are tender. Toss; cover and set aside.
