Lunch: Peanut-Butter Apple Muffin

This easy open-faced sandwich makes a great snack or meal for young kids. A sprinkling of wheat germ adds an extra dose of good-for-you fiber.

Ingredients

1/4 c. chunky peanut butter (preferably natural)
2 whole-wheat English muffins
Apple slices

Instructions

Dividing evenly, spread peanut butter on muffin halves. Sprinkle with wheat germ; then top with apple slices. Serve open-faced.
