Broccoli is one of the non-starchy vegetables that has a very low glycemic index (GI), which is beneficial for reducing blood sugar levels. Broccoli is also a source of DIM (Diindolymethane). Diindolymethane is very effective in reducing the testosterone levels in the body, an action that would automatically curb male dominant features and regulate the estrogen levels in the system. Sunflower seeds are an excellent food for PCOS as they are packed with vitamin B2 (riboflavin) and vitamin B6 (pyridoxine). Just one cup of sunflower seeds provides 30% of the recommended daily intake for vitamin B6. Sunflower seeds are also loaded with two other important of PCOS busting minerals: zinc and magnesium.
Ingredients
1/4 cup low fat yogurt
0.12 cup orange juice
1 miniature box raisins
1/4 cup chopped red onion
4 cups flowerets broccoli
1/4 cup hulled sunflower seeds
1 tbsp mayonnaise, low calorie
Instructions
1. Combine broccoli, onion, raisins, and sunflower seeds in a medium bowl.
2. In a small bowl, whisk the yogurt, orange juice, and mayonnaise until blended.
3. Pour over broccoli mixture and toss to coat.
