Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 c. butter
1 c. sugar
3 eggs
.67 c. heavy cream
3/4 c. roasted walnuts or any nuts
1 1/2 c. cake flour
2 tbsp. fine cocoa powder
2 tsp. baking powder
1/2 c. chocolate chips

Instructions

Preheat the oven to 375 degrees.
Place the butter and sugar in the bowl of an electric mixer, and mix at medium speed for 2 minutes until uniform.
Add the eggs, cream, nuts, flour, cocoa powder, and baking powder, and reduce the mixing speed to low. Mix until uniform.
Turn off the mixer, add the chocolate chips, and mix well.
Place cupcake liner in each cup of a 6-cup muffin pan. Spoon in the batter so each cup is 3 ⁄4 full.
Bake for 20 minutes.
Remove the muffins from the oven and set aside to cool.
Remove the muffins from the pan and serve immediately, or store in an airtight container for up to 2 days.
