Ingredients

1 lb. fresh sour (tart) cherries
1 c. granulated sugar
4 c. club soda
1 1/2 c. fresh lemon juice
1 tbsp. fresh lemon juice
1/2 c. superfine sugar
ice cubes
1 c. water
fresh sour (tart) cherries

Instructions

Make the syrup: Simmer cherries, granulated sugar, water, and lemon juice in a medium saucepan over medium heat until cherries are broken down and juicy and liquid is syrupy, about 30 minutes.
Strain cherries and syrup through a fine sieve; discard solids. Let cool completely.
