Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 (18 oz) roll refrigerated sugar cookie dough, sliced 1/4-inch thin
1 (14 oz) package chocolate mint wafers
1 tablespoon coarsely chopped walnuts, ( or pecans) or enough to cover top of cookies
1 egg, beaten

Instructions

Preheat oven to 375 °.
Slightly grease a cookie sheet. Place slices of sugar cookies on sheet, about 2-3 inches apart. Top each with a chocolate wafer. Cover wafer with another slice of cookie dough. Brush dough with a beaten egg. Press nuts into top of dough. Bake for about 10 minutes. Makes about 20 cookies.
