Lunch: New Orleans Pork and Charred Beans

This is one recipe sure to spice up your dinner routine. The pork chops are rubbed with a blend of Cajun seasonings before being broiled and served with a side of charred green beans. The best part? This flavorful dinner is ready in about 30 minutes.

Ingredients

2 tsp. hot paprika
1 tsp. garlic powder
1 tsp. dried oregano
1/2 tsp. salt
1/4 tsp. cayenne pepper
4 thin-cut pork chops
2 tsp. olive oil
1 lb. green beans
2 tbsp. water
2 tsp. olive oil
1/4 tsp. salt

Instructions

Preheat broiler. Mix 2 teaspoons of hot paprika, 1 teaspoon each of garlic powder and dried oregano, 1/2 teaspoon of salt, and 1/4 teaspoon of cayenne pepper in a small bowl.
Brush 4 thin-cut pork chops with 2 teaspoons of olive oil then rub them with the spice mixture. Transfer the pork chops to a foil-lined jelly-roll pan. Broil the pork chops, 6 inches from the heat source, on high for 5 minutes.
Meanwhile, microwave 1 pound of green beans and 2 tablespoons of water in a covered baking dish on high for 2 minutes, or until the beans are bright green. Drain the green beans and toss them with 2 teaspoons of olive oil and 1/4 teaspoon of salt.
Remove the pork chops from the oven, flip them, and push them to one side of the pan. Spread the green beans on the other side of pan and broil for 3 minutes, or until the beans blister and the pork is cooked to 145 degrees F. Serve with the pan juices.
