Nuts are a natural source of Inositol, a derivative of Vitamin B (which is often prescribed in the form of supplements for women with PCOS). Inositol can effectively control the symptoms of PCOS by reducing insulin resistance and improving insulin sensitivity. Walnuts are low on the glycemic index. What’s more, they also lower the glycemic index of other foods that you eat in conjunction with these nuts. Any kind of nuts provide a healthy source of fat and a great way to encourage PCOS weight loss.

Ingredients

1 cup walnuts, chopped
1/2 cup sugar
2 large eggs
1/2 cup sour cream
1/2 cup butter
1 tsp salt
1 tsp vanilla extract
3 medium bananas, mashed
1 tsp baking soda
1/2 cup packed brown sugar
1 1/2 cups flour

Instructions

1. Preheat oven to 325 °F (160 °C).

2. Cream butter, white and brown sugar.

3. Add eggs one at a time, then the vanilla extract.

4. Using a wooden spoon add sour cream, mashed bananas, flour, baking soda and salt.

5. Add the chopped nuts.

6. Spoon into greased muffin or bread pans and bake for 35-40 minutes.
