Lunch: Tomato, Corn, and Avocado Salad

Ingredients
1 ear corn
2 pt. cherry, grape, or pear tomatoes
1 avocado
2 scallions
2 tbsp. fresh lime juice
1 tbsp. vegetable oil
Coarse salt
ground pepper
Instructions
Stand the ear of corn in a large wide bowl. With a sharp knife, carefully slice downward to release the kernels. Discard the cob.
