Cinnamon is one of the best ingredients that someone with insulin sensitivity can eat. Half a teaspoon of cinnamon per day has been shown to be very effective at normalizing blood sugar levels. Cinnamon contains hydroxychalcone, which is thought to enhance the effects of insulin. It has also been suggested that Cinnamon prevents post-meal blood sugar spikes by slowing the gastric emptying rate - meaning that food digests slowly. Ingredients

3 eggs
1/4 cup milk
2 1/2 tablespoons maple syrup
1 teaspoon vanilla extract
1 teaspoon ground cinnamon
1/3 cup cornflakes cereal, crumbled
8 slices white bread
2 tablespoons confectioners' sugar for dusting

Instructions

In a medium bowl, beat together the eggs, milk, maple syrup, vanilla, and cinnamon. Take a small handful of cornflakes and crumble them into the mixture. Stir well.
Soak the bread slices in the mixture for about 2 to 3 minutes.
Heat a lightly oiled griddle or frying pan over medium high heat. Place the bread slices in the pan; brown on both sides. Sprinkle with confectioners' sugar; serve hot.
