Dinner: Chicken a La Jules

A quick and easy chicken dish for one, which can easily be adjusted to serve many.

Lemons can help to prevent oxidative damage to the body, which women with PCOS are often susceptible to. Fresh spinach is an excellent source of vitamin K, vitamin A, vitamin C, and vitamin B6, all of which have significant roles in reducing inflammation in the body, all of which help in the case of infertility.

Ingredients

2 breasts, bone and skin removed chicken tenderloin
2 oz lemon juice
1 tsp garlic, minced
1 cup pieces or slices mushrooms
1/2 package spinach

Instructions

1. Cook 2 chicken breast tenderloins (approx. 12-15 min in the oven at 350° F (180° C)).

2. While chicken is cooking, sauté sliced mushrooms, spinach, and minced garlic (as much or as little of each as you prefer) in a large pan or wok.

3. Once the chicken is cooked, cut the tenderloins into cubes or bite-size pieces.

4. Add the chicken pieces to the vegetable/garlic mix and allow to cook for a few minutes to soak up the flavors.

5. Add lemon juice to the mixture and cook for another minute or two.

6. If desired, drizzle an additional amount of lemon juice over the finished dish before serving.
